在釀酒過程中,原料的飽滿度、酒曲的發(fā)酵力、糧食的蒸煮程度、發(fā)酵溫度的控制、釀酒的設(shè)備、釀酒的溫度等都會影響出酒率。所以,要生產(chǎn)出更多的高度酒,從原料選擇到酒生產(chǎn)的每一個(gè)環(huán)節(jié)都要嚴(yán)格控制,否則,生產(chǎn)出更多的高度酒只是一句空話。
