一、稻殼的理化特性

稻殼是由外穎、內(nèi)穎，護(hù)穎和小穗軸等幾部分組成，外穎頂部之外長(zhǎng)有鬢毛狀的毛。正稻殼則是由一些粗燥的厚壁細(xì)胞組成，其厚度大約24~30微米，稻殼富含纖維素、木質(zhì)素、二氧化硅，其中脂肪、蛋白質(zhì)的含量較低，基于稻谷品種、地區(qū)、氣候等差異，其化學(xué)組成會(huì)有差異。

1、稀釋淀粉含量，沖淡淀粉。

糧食中淀粉含量在65%左右，發(fā)酵入池淀粉控制在17~22%之間。加入稻殼起到?jīng)_淡淀粉作用。

稻殼中含有多縮戊糖，果膠質(zhì)和硅酸鹽等成份，在發(fā)酵過程中影響酒質(zhì)，所以其用量要嚴(yán)格控制(一般控制在8%比較合適)，并且使用前進(jìn)行清蒸，多縮戊糖在微生物的作用下生成t醛。稻殼要求新鮮、干燥、無霉?fàn)€。
